Try some of these tasty and healthy summer recipes:
Tofu/seafood lettuce wraps – lightly sauté tofu or seafood like shrimp or crab and season with your favorite seasonings. Put your tofu/seafood into a lettuce leaf, wrap it up, and enjoy!
Tuna on Cucumbers – cut cucumbers into rounds. Mix tuna with your favorite hummus. Place tuna onto the cucumbers for a crunchy snack. (Can also use canned or packaged salmon or sardines)
Stuffed Cucumbers – Cut a cucumber in half lengthwise and scoop out the soft inside. Fill the space you just make with ground meat/turkey/chicken, tuna, or cottage cheese.
